In between phone calls to and from Korea I decided to keep it a little simple for this post. I was headed to a friends place and thought that a take on the classic oatmeal cookie would be a great snack to bring along.
This recipe comes from my first cookbook. I have been making this recipe since May 1, 2000 (I quote: “Very good make again because it passed Laura’s test!”). Whenever I make recipes in cookbooks I own I write a note to myself for the next time I make the recipe. I made this recipe when my sister was still picky with what she ate and she even liked them!
It is a very basic recipe that allows you to add what you like to them, the adjustments in my recipe were using whole wheat flour and adding raisins. But nuts, seeds and dried fruits can be used to make these cookies more granola bar cluster like. A tip I learned from baking school is to soak all your dried fruit in water prior to placing them into the batter. This creates a juicy piece of dried fruit in your baked good as opposed to a hard piece of dried fruit.
