Rice Pudding

The ultimate comfort food… well for me anyways. On a cold day like today, I find myself curled up in a ball on the couch knitting. Feeling a little lazy but craving some ‘lazy exercise’. Which translated into walking to the kitchen to make a sweet treat such as rice pudding. A simple recipe, with simple ingredients is always simply delicious!

 I have used this recipe from joyofbaking.com several times, it always turns out great. The recipe itself can be adjusted to however it is preferred. I chose to focus on orange zest and just keep it simple. Using vanilla beans also is a great way to emphasize the cooked milk flavour.

For best results use white rice. I have made rice pudding with brown rice before and it turns out fine, but it can turn out a little crunchy. If using brown rice let the rice soak in some milk before cooking it in the milk to help with getting the brown rice a bit more mushy when cooked.

Well once in the kitchen I got the energy bug and could not go back to being  a ball on the couch with my ball of yarn. Which led to me grabbing my jacket and going cross-country skiing with the family. Talk about extremes!
