French Toast with Bananas and Yogurt

I would like to make a toast! Actually a French toast! A toast to a dear friend that has just gotten accepted into optometry school! Wishing you the best! So a toast to my friend! Good luck!

Now onto the toast pictured above.

What is a Canadian supposed to do without maple syrup? Is that even a question that exists? Well… it does for me. Maple syrup is in Korea but it has all come from Canada and I feel too guilty paying for something to fly across the world so I can have some french toast drizzled with delight. So what to replace it with…

Lets just say it’s not too difficult when ‘plain’ yogurt has 29g of sugar in it. That is not too far off of the amount of sugar found in maple syrup.

 

I added some oats on top of my french toast because the bread here does not have the luxury of fiber… especially if you use rice bread (like I did). I have found bread in Korea that has fiber… but not nearly like the breads found at home. And the sodium content is through the roof. I am really missing an oven where I could make my own bread…

 … But I guess this will have to do for now.
